LENTIL BURGERS

Ingredients
Method

- Just cover the lentils with water and cook slowly until soft, topping up water if necessary but making sure that they are fairly 'dry' when done.

- Add to the lentils: ground brazil nuts, breadcrumbs, yeast extract, herbs, seasoning.

- You may also add finely diced garlic and or mushrooms.

- Add the beaten egg.

- The mixture should be quite stiff and be shaped into 'rounds' - use a suitable pastry cutter or other utensil to shape the mixture.

- Adding some white flour to hands / utensils helps with this procedure.

- Fry the burgers slowly in vegetable fat or coconut oil. Cook right through on one side first, then the other. Avoid 'flipping'.

Best served warm with salad etc
